On Saturday, November 5th, 2005, Choux Choux Charcuterie was chosen Best-of-the-Bunch. Owners, Luke Young and Paige Symonds, have inspired our group of 19 with ideas for gourmet offerings of meats, cheeses and pates for every palate...

Choux Choux Charcuterie opened only 3 l/2 months ago in the midst of Antique Row.  The location is one that the owners fell in love with and waited a long time for, jumping through hoops in order to make their deli dream a reality.  Out of a former antique store, this delightful young couple created a shop of intriguing offerings.

Together, Luke and Paige bring a wealth of knowledge and talent to their new enterprise. They met as chefs at Vancouver’s RainCity Grill and from there took their skills to award-winning Sooke Harbour House.  Later, they set off to see a little of the world.

When they returned to Vancouver, Luke decided to try his hand at butchering, while Paige went back to France to work on a goat farm in order to pursue her interest in cheese-making.

Choux Choux products are predominantly local and free range, with all meat smoked on the premises and sausages made on site.  Luke delights in experimenting with recipes for his delicious pates.

The shop offers a different lunch daily that combines a freshly-made sandwich, homemade soup and a plat de jour—perhaps sumptuous seared pork with barley ragout and mustard sauce.  Non-meat-eaters can choose from Paige's carefully chosen array of delectable world-wide cheeses to eat with fresh bread and pickles.

With the festive season approaching, you could well bring joy to someone on your list with one of the shop's holiday gift baskets on display in their window.
